Nougat
The nougat is a sweet dough obtained by cooking honey (or sugar) that are incorporated peeled and toasted almonds. A mass that can be added, or not, egg white to emulsify. This paste is then kneaded and is traditionally given final shape of rectangular tablet or cake.
The main production centers are located in the provinces of Alicante, mainly, and Valencia.
The preparation of nougat production is concentrated in the traditional pastry Jijona (in Alicante, Valencia, Spain) and Casino (in the Province of Valencia, Valencia, Spain) and comes in a variety called the Alicante nougat almonds to the view (and is popularly called hard nougat), or nougat Jijona presenting the almonds and pasty-looking (and is popularly called soft one). In Casinos (Valencia province), but instead develop varieties known as hard nougat, is sold mainly to the variety of "soft one" (though the local processing is employed). Both varieties are part of the Spanish Christmas food.
